Project 366 - Week 4

Ya'll.....I struggled BIG time this week. Sicky toddler who won't sleep = zero motivation to do anything. So I relied heavily on my handy dandy iPhone this week. Siiiigh. Always this week, right?!


Sunday - Morning cartoons with dad. Saw this, grabbed my camera and bumped the ISO way up and hoped for the best. I hate how noisy it is. Wish I had something to fix that! But precious shot regardless.

Monday - Cutie tangerines, so tasty right now!

Tuesday - Before the sickies hit

Wednesday - Coffee please!

Thursday - Mr. Quackers had to make the trip to Wichita with us.

Friday - Made these cupcakes for my class, Sunflowers for Kansas Day!

Saturday - Lame, huh? I was so excited to buy these jars and organize my spices in them. Ha!

Project 366 - Week 3

Ok, now it's getting a little more difficult to remember to take a pic everyday. Busy busy week, but I did it! 

January 15 - Snuggled up watching Sunday morning cartoons

January 16th - I had MLK day off, so little man and I had a mommy-son day, starting with breakfast out and Carter's first donut. :)

January 17 - He can unlock, find and navigate any app on my iPhone, crazy!

January 18 - my favorite boots

January 19 - moi

January 20 - ordered out Chinese, here's my fortune....but not much of a fortune, just a saying. Rip off!

January 21 - Special time with grandpa today

Week 2 - Project 366

Sooo....you'll see a repeat. I posted last Sunday's pic last week, so I'm going to repost to keep the Sunday-Saturday pics consistent.

And so this week.....I....um.....crashed our home computer. I was downloading a free photoshop action (off of a reputable blog btw) and I got a nasty virus that messed up our main computer. Luckily, hubs got the pics off (whew!) but Photoshop is going to be out of the picture for awhile.

Anywho....enjoy our week in pics!

Week 1 - Project 366

I'm so excited to have week 1 complete! I shot the majority with my Nikon D90, but do have one with an iPhone as that was the best I could do that day. My goal for next week is to try out RAW (and to invest in more memory cards). I'd also like to take one self portrait.

Pepper and Beef Stir-fry

I'm all about tasty, easy, and healthy dinners. There's nothing gourmet about this dish, but it is one of our family favorites!

You'll need:
  • 4 cloves chopped garlic (I use the jar kind because it's quick and easy)
  • 1 lb ground beef
  • 1 bag of angel hair shredded green cabbage (cole slaw)
  • 1 red pepper
  • 5 T. Teriyaki sauce
  • 1 tsp ground black pepper
Get your wok or skillet to medium high heat, then you can saute the garlic in some oil (2 Tbs.) if you want. I just throw the garlic in with the ground beef.  Brown the ground beef. You can also throw some diced onion in there too. I didn't have onion this time...bummer.  Oh and I sure do love my Pampered Chef Mix N Chop shown below, it's the best for cooking ground beef.



Then, stir in the cabbage and red pepper. Cook until tender, about 7 minutes.


Meanwhile, you can start some rice in another pan and get it cooking.  I serve this stir-fry over brown rice.

Then, add in the teriyaki and then black pepper. You can use more or less of both depending on your taste. We like lots of pepper. Spicy!  Sometimes, I add a bit of seasoned salt, like a 1/2 tsp.


Then it looks all pretty like this and the cabbage cooks down. Taste it and make sure it's juuuuust right. 


And that's that! Make sure the veggies are as tender as you want them, and serve over rice. Easy peasy and a scrumptious meal for your family in no time.

Never.A.Dull.Moment

Ahhh this kid. What a crack up....Santa brought a Mr. Potato Head and he's been spending more time trying to fit the pieces on his head.



Going to miss spending my days with Carter, as I go back to work today. Le sigh. It will be nice to get into a routine though.
